Saxå burgers – the buns, Serves 16

Oven temperature: 250°C


Ingredients dough 1:

1 ½ dl high-fibre rolled oatmeal

1 ½ dl spelt flour

2 tbsp bran of own choice

3 dl hot water


Directions dough 1:

Mix oatmeal, spelt flour and bran in a food processor for dough. Pour over the hot water and mix to a porridge. Leave to cool.


Ingredients dough 2:

2 ½ dl lukewarm water

50 g fresh yeast

½ dl oil of own choice

1 tsp salt

2 tsp sugar

8 dl four-grain stoneground flour


Directions dough 2:


Dissolve the yeast in the water and add to dough 1. Add oil, salt, sugar and enough of the four-grain flour for the dough not to stick to the sides of the bowl. Leave to rise for 40 minutes. Knead the dough smooth on floured table and work into a roll. Cut into 16 pieces and form buns. Let them rise and then bake in oven for 12-14 minutes. To serve, cut the top off, dig out some of the bread inside and fill with Old Man’s Hash (‘Gubbröra’ – see adjoining recipe).
