Tjinuski crème

Tjinuski crème with fresh berries. This creamy fudge dessert is of Russian origin and is associated with the legendary earls of Tjinuski. The crème has hints of vanilla and the dessert has become something of a tradition at Saxå Manor.


Tjinuski crème

Serves 12-15


3 dl milk

3 dl cream

3 dl sugar

1 1/2 dl syrup

1 vanilla pod

20 g unsalted butter



Cut the vanilla pod length-wise and scrape out the content. Blend all ingredients in a saucepan and bring to boil. Stir the mixture until it thickens. Make the ‘bullet test’: drip a drop of the mixture into a cup of cold water. If it forms a round bullet, the tjinuskin is finished. Finally stir in a lump of cold butter. Fill into crème cups (small portion cups) and leave in the fridge for few hours. Serve with fresh berries.
