Baked pheasant breast


Oven temperature: 180°C

3 pheasants serve 10-12



3 pheasants


Salt and pepper to taste


Serving suggestions:

Potatoes tossed in butter

Fresh herbs

Artichoke bottoms

Pheasant thigh cakes (see adjoining recipe)




Ask the butcher to cut up the pheasants but leave the breast on the bone. Gently fry the breasts till golden in butter with the meaty side down. Cover with thin slices of butter, salt and pepper to taste.  Bake in oven until the inner temperature is 49°C.
